Plain oatmeal is not my thing. But bake it in the oven with a little sugar, spice and everything nice and it’s instantly transformed into something I actually want to eat in the mornings.
Baked oatmeal is so versatile. I’ve done chocolate chip baked oatmeal, apples + cinnamon baked oatmeal and pear + cinnamon baked oatmeal, and coconut baked oatmeal – all delicious! Peanut butter and banana are the perfect breakfast combo. And I even add a little Nutella if my sweet tooth is bugging me.
I’ll usually make this recipe on a Sunday morning in order to prep for the rest of the week.
