And the best part is that it combines my Grandmother’s Traditional Butter Tart Recipe and makes it slightly healthier. Now, I want you to understand that I am not magical, these are definitely not HEALTHY Butter Tarts, but they can be considered a HEALTHIER Butter Tart, so read on to find out how I discovered this. Ok then, so let’s take out some of the FAT by eliminating the pastry part and exchanging it for something else! Sound good? Great, then you’ve come to the right place. On the weekend, I was inspired by the Red Cottage Chroincle’s Butter Tart photos. Hmmm….inspired may not be the right word, more like, an instant craving for Butter Tarts rushed over me when I saw her beautiful images. I knew I had a few tart shells (yes, the cheater method) in the freezer, but I also knew that my Butter Tart Recipe was going to need more than the 12 shells that I had. What to do…..I considered many different options and decided to try something completely different and I am glad that I did! I cute circles out of large tortillas shells and gently folded them into a muffin tin. And voila! A healthier version of Butter Tarts was discovered. Yes, there is a lot of sugar in the filling, but the pastry is also filled with fat. The tortillas offer a lighter version of the traditional Butter Tart, with all of the ooey gooey goodness left in the filling.
